On Saturday, 12th September an extravagant evening commences at 6:30 pm with a cocktail reception including a selection of delectable canapés – Smoked salmon, Ferrero Rocher foie gras, Leek terrine and Iberico, together with wines and crafted cocktails created by the resort’s resident mixologist, Ron Ramirez. This follows with a 4-course culinary journey reaching a crescendo with the performance by the Grand Opera Thailand with excerpts from Carmen, Don Pasquale & La Traviata. The exquisite and innovative European dinner features an opera-themed presentation with “Venice” – Lobster poached in lime butter, guacamole espuma, pomegranate structures, poached quail egg, tomato bon bon decorated with edible flowers and micro greens, “Salzburg” – Black truffle mousse in potato crème soup and porcini powder, “Barcelona” – Black cod fillet pan seared with porcini mushroom, butter nut, thyme, smoked vinegar and almond broth, “Sevilla” – Citrus divine with white chocolate, sable, crème Anglaise, crumble and confit. On Sunday, 13th September an enchanting afternoon with an exquisite selection of delectable high tea specialties crafted by acclaimed Executive Pastry Chef, Claus Olsen includes free-flow sparkling wines, specialty teas by Dilmah Tea and coffee creations by The Coffee Club. The Grand Opera Thailand performs a selection of arias and songs from favourite musicals and excerpts from The Phantom of the Opera. Amongst a range of savoury afternoon selection is a tempting array of Chef Claus’ immaculate sweet decadent desserts. Pleasing our sweet pleasures along with other great servings are, the Lemon Confit Tarts with intense lemon curd and sus-vi lemons skins, the Caramel Turtles which are made with the ideal marriage of Valrhona milk chocolate, caramel and hand-selected piedmont hazelnuts and the Chiang Mai Shortcakes with strawberries from Chiang Mai slow poached with white balsamic vinegar.
