Chef de Cuisine Edoardo Bonavolta is delighted to continue where he left off in May but has created more intriguingly complex levels of delicious fare where new classics such as Italian lasagna and minestrone have been introduced in the addition to the old favorites.
Distinguishable from usual cooked vegan foods on the market where “greens” are overcooked leaving them brown, along with man-made protein created from nutrition-lacking ingredients, Raw Vegan Cuisine at Luce is excitingly different. Chef Edoardo uses only natural whole foods and prepares them using “raw food” techniques to ensure the health benefits from the live enzymes in the vegetables remain completely intact.
Given the fact that true Italian Cuisine celebrates and pays respect to the uniqueness of ingredients such vegetables and other fresh produce, native Italian Chef Edoardo also incorporates the root philosophy of his home country’s food into the preparation of his dishes as well.
One of his new specials is an entirely unexpected vegan Bolognese lasagna that tastes exactly like something Mamma used to make. Made from chopped carrots, dehydrated zucchini and semi-dried tomato sauce, the flavor is harmonized by a creamy vegan béchamel sauce.
