Taking up his new position in July 2013, Chef Aurélien Poirot brings with him a wealth of Michelin star restaurant experience in Paris, Brussels, London, Amsterdam and Bangkok. He joins Anantara Hotels, Resorts & Spas from an Executive Chef position at Sofitel Bangkok Sukhumvit
Born in Paris, Aurélien Poirot is an exceptional chef with an impressive culinary pedigree that has seen him work alongside the acknowledged masters of French cuisine. His education began at the renowned Ecole Hôtelière Ferrandi in Paris. After completing his studies, his natural ability and passion for fine gastronomy secured him a position at Chef Alain Dutournier’s one Michelin star restaurant Au Trou Gascon. Chef Aurélien then went on to work as a Commis Chef at Chef Alain Dutournier’s two Michelin star restaurant Carre des Feuillants.
Eager to develop his career by working with the best in the industry, Chef Aurélien set his sights high and secured a position working with the legendary Chef Alain Ducasse. During his time at Restaurant Il Cortile in Paris, Chef Aurélien assisted in the management of the kitchen and maintained the demanding standards that has earned Ducasse his coveted Michelin star.
Chef Aurélien has also worked with Chef Michel Del Burgo at the three Michelin star restaurant Taillevent in Paris, with Chef Jean-Louis Nomicos at the two Michelin star Restaurant Lasserre, and with Chef Yannick Alleno at the three Michelin star Hotel le Meurice.
In 2006 Chef Aurélien was appointed Executive Chef at the Sofitel Brussels where he trained the kitchen team to meet his exacting standards, and collaborated with the inventor of nouvelle cuisine and three Michelin star Chef Alain Senderens as part of the opening team. The rewards came swiftly and in 2007 the hotel’s signature restaurant, Spud’s, was voted ‘Second Best Hotel Restaurant in Brussels’ by the prestigious ‘Guide Lemaire’ with 95/100 points, and ‘Third Best Themed Restaurant in the World’ by Food Illustrated Magazine. Chef Aurélien continued his successful partnership with Sofitel at Hotel Sofitel Legend The Grand Amsterdam, establishing the hotel’s restaurant, Bridges, as the most celebrated dining venue in the city.
Few chefs can claim to have such a Michelin star studded career as Chef Aurélien Poirot. Applauded for his mastery of French cuisine by the New York Times, nominated as ‘Chef of the Year’ by Time Out Magazine, and author of the book ‘The Grand, Amsterdam: History and Cooking of a Legend’,
