Bangkok, April 23, 2012. Rossini’s award-winning restaurant has introduced an outstanding new menu of exquisite Italian cuisine. The result of an extraordinary collaboration between Michelin star Chef Alfredo Russo and Rossini’s own Chef Stefano Merlo, the menu features a selection of sublime dishes that draws inspiration from Italy’s rich culinary tradition.

The creativity and experience of Chef Alfredo Russo and Chef Stefano Merlo has ensured that Rossini’s is regarded as one of the finest Italian restaurants in Bangkok and their new menu features a selection of ‘Rossini’s most treasured dishes’, antipasti, soups, risottos, main dishes, and desserts.

Discerning diners can choose from enticing antipasti including capesante con olive ascolane, aglio e menta, ala plancha sea scallop with stuffed olives, garlic and mint, and insalata d’astice con indivia e salsa al lardo di Colonnata, a flavorful lobster salad with endive and Colonnata ham sauce. The antipasti menu also includes the ‘Rossini’s most treasured dish’ created by Chef Alfredo of broccoli, cime di rapa, salsiccia croccante e mozzarella, broccoli with turnip leaves, crispy sausage and mozzarella cream.

Homemade pasta dishes are available as an appetizer or a main dish and include linguine al nero di seppia con guazzetto di pesce piccante, squid ink linguine with spicy passata tomato seafood sauce, and the vegetarian ‘Rossini’s most treasured dish’ of gnocchi alla rapa rossa con salsa al Castelverde, beetroot gnocchi with Castelverde cheese sauce.

Traditional risottos are given the distinctive Rossini’s touch with dishes such as risotto alla cipolla di tropea, guanciale e gorgonzola, a comforting risotto with Tropea onions, Guanciale ham and gorgonzola cheese, and the inspired pairing of Porcini mushrooms and crayfish in the delicious risotto ai porcini e gamberi di fiume.   There’s also Chef Alfredo’s Michelin star dish of ribollita al cavolo nero, pecorino e olio, ribollita soup of Tuscan kale, olive oil and pecorino cheese, and main course highlights including pesce neve in casseruola con asparagi, pomodori secchi, delicate snow fish with asparagus and sun dried cherry tomatoes, and the classic Italian dish of braised veal ossobucco.
