As per tradition, the arrival of the combined grand buffet and a la carte Christmas dinner is a magical moment when the feverish anticipation comes to fruition. Taking pride of place are naturally the roasts – succulent butterball turkey, spicy herbed lamb rack and smoked pork chop. Sharing the spotlight is glorious seafood with Fine de Claire oysters, Maine lobster, Alaskan king crab and tiger prawns. Duck breast stuffed with prune, Peking duck and live foie gras terrine and all-inclusive a la carte menu ranges from salmon tartar with quail egg to warm lobster salad are available. Finally, Christmas pudding takes on new meaning as part of the Yuletide gala desserts. There is so much to look forward to indeed!

You especially won’t want to miss the honey glazed ham, roasted lamb rack and Wagyu prime rib. Nor the three kinds of oysters, Maine lobster, langoustine or Gindara fish. Savour stuffed Guinea fowl/rosemary jus, veal medallion/cepe mushroom and Roasted duck a l’orange, too. Plus still sizzling from the grill Hokkaido scallops, Maine lobster, Alaskan king crab + tiger prawn. Intersperse with a la carte orders of beef tartar/quail egg, pan seared foie gras/red wine apple, snow fish/cauliflower mousse and duck confit parmentier gratin. The Reflexions’ culinary artists ensure that the special occasion is the  landmark  event it should be with some remarkable gastronomy The arrival of a new year merits something out of the ordinary and The Reflexions’ culinary artists don’t disappoint. An inspired sequence of gastronomic revelations begins with oysters St.Kerber/saffron/chorizo and segues into beetroot + pear smoked eel/anchovies.  Foie gras torchon/wild berry jam complements grilled Hokkaido scallop/chestnut + port while Pike perch sousvide builds to a climax of Roasted venison/porcini/coffee. Sweet delights of Champagne, elderflower espuma and walnut cake/ roast apple ice cream ensure that the celebratory repast hits all the right buttons.
