The Sukhothai Bangkok proudly welcomes the team from Paris’s award-winning Le Chateaubriand led by chef & owner Inaki Aizpitarte, famous for his new breed of Parisian bistros in France.
With a Basque background, and a self-taught marvel, Chef Inaki began his cooking career at Café des Delices under Laurent Chareau and pursued it at La Famille in Montmartre, where he first won acclaim for his creative cooking, before he joined Le Transversal in the Mac/Val modern arts museum in Vitry-sur-Seine, where Laurent Chareau invited him to re-unite their talents.
In April 2006, together with Frederic Peneau, a neighborhood friend whom he first met while he was at La Famille, Inaki purchased a historic bistro near Belleville and renamed it Le Chateaubriand. It was an instant hit, with its immediate success underscored domestically by being declared the Le Fooding guide’s Best Restaurant in 2007. Global recognition came with the title of “Breakthrough Restaurant” in the annual revered poll “The S.Pellegrino World’s 50 Best Restaurant” in 2009. It has been listed there ever since and ranked 15th Best Restaurant in its 2012 edition.
Although notably unconventional in the French culinary establishment, Chef lnaki’s talent was officially recognized by the French Ministry of Culture in 2012, as French Minister of Culture and Communication Frederic Mitterrand awarded him with the most distinctive and honorable rank of “Chevalier des Arts et Lettres”, together with five other outstanding French chefs.
Inaki’s cuisine, influenced by his many travels, innovates with a straight-forward cooking style. Using the best ingredients, he combines stand-alone tastes and textures that reconcile beautifully, with both irreverence and harmony. His art is a reflection of himself: nonchalant, bold, intelligent and simple. Difficult to define, his cooking style takes you off-guard, with fragrances, textures and flavors in a precise sequence and with a well designed purpose that your palate will identify and enjoy throughout the journey of his fascinating cuisine.
