The restaurant’s new VIE Executive Sous Chef, Nicolas Basset, furthers the delicious appeal. Having lived around the world, including Brazil and France, and worked with some of the world’s most illustrious names in gastronomy, such as Albert Roux and Marcus Wareing, Chef Nicolas delights in offering new compositions to the menu, adding the touch of varied experience and true artistry.
The newly revamped menus for both La VIE Set Lunch and La VIE Set Dinners are an apt reflection of his talents. Discover unique tastes with “La VIE” salad with warm confit duck leg, frisée, 64 °C egg and lardons; 150 days grain-fed rib eye steak served with truffled pommes purée and beef jus; or a delightful Mediterranean catch of the day, with bouillabaisse, spring vegetables and saffron. For dinner, don’t miss the Tournedos rossini, foie-gras, périgueux sauce or the Imperial pigeon pithiviers, white onion puree, madeira jus. A great selection is also offered during the VIE Love Brunch every Sunday with unlimited orders and special items from the chef.
A marvellous à la carte menu with updated dishes is available as well during lunch and dinner. And, by the way, La VIE – Creative French Cuisine is still known for some of the best Creme Brûlée in town.
