The indulgent evening of Japanese delights starts early at 4.30 pm for registration followed by an aperitif of Yuzu (plum) sake and soda to enjoy during an informal and entertaining talk on the subject of sake which begins at 5 pm, then dinner at 6 pm. Those wishing only to join the sake-paired dinner at 6 pm are also welcome.
Sake aficionados and novices alike will be enriched by the informed and enthralling insights into a subject with which many are fascinated but few are familiar. The guest sake expert Tomokazu Mizumura from the renowned house of Kikusui will explain the different ways sake is made, how to discern between different types and find what you like, and the different Japanese dishes each type goes especially well with.
Celebrated for incorporating new perspectives into his native cuisine, Chef Shinsuke’s sake-inspired menu begins with classic sake-complementing appetizers. The culinary journey continues with finest mullet roe, salted sweet prawn, rolled salmon sashimi paired with kikusui ginjou sake. Then builds to crescendos of flat fish, ponzu sauce paired with gazanryu kisaragi, and grilled miso-marinated Miyazaki beef, foie gras, to name but two. Other highlights include sea urchin, salmon roe, conger eel, Hokkaido scallop, octopus, premium tuna and more. Sushi, sashimi, salad, hot pot, Japanese grilling, tempura, noodles, jelly and sorbet are all there.
