Further advancing its perpetual pursuit of new wining + dining experiences, The Reflexions’ next Wine + Dine Perspective featured wine dinner on Thursday 05 September 2013, brings together critics’ choice Spanish wines and three courses of French cuisine specially created to complement them.
Each course of the indulgent dinner offers two contrasting choices and guests are invited to opt for either red or white wine parings that will ignite a unique adventure in the realms of taste and texture.
“The wines are from regions of Spain that are bywords for producing world class labels, each with its own distinctive qualities,” says Daniel Bucher, The Reflexions chef de cuisine.
“The dishes we have therefore created to complement these elite selections aspire to echo, contrast and amplify every layer of their rich character.”
The hors d’oeuvres offer a choice of Alaska King Crab Salad with Avocado and Cream Herbs or Smoked Tomato and Clam Soup with Chimichurri. Entrees are Baked Baramundi and Octopus, Green Beans with Black Pudding or Boiled Beef with Spicy Horseradish Sauce, Potato Scoops and Egg Yolk. The mouth watering medley concludes with Dark Chocolate Crème Brulée, Texture of Pear and Fennel sherbet or Roasted Pineapple Bar, Meringue and Vanilla Ice Cream.
To complement these to perfection, wining and dining aficionados can opt for either the white wine flight of 2010 Cune, Viura and Blanco Rioja or Red Wine that sequence 2008, Cune Crianza, Tempranillo, and Garnacha tinta y Mazuelo.
