Ojo’s One Night Takeover
F*nkytown (pronounced Funkytown) collaborates with Ojo at The Standard Bangkok Mahanakhon for an exciting guest shift. Ojo’s Chef Alonso Luna Zarate takes over F*nkytown’s kitchen, presenting a special menu that merges creativity with culinary mastery. Guests gets to try unique dishes such as Funky Guacamole, featuring escamoles (ant eggs), yuzu kosho, tostadas, and worm salt. Another appetiser, Scallop Aguachile, will showcase fresh scallops, edamame, greens, and leche de tigre. The Bimole Tetela offers duck tetela with mole negro and coloradito, complemented by hoja santa.
For the main courses, the Tlayuda de Cecina will present pork secreto enchilado with black garlic beans, cheese, morita salsa, marrow, and crickets. Another standout dish, Hamachi Birria, will include grilled Hamachi collar with guajillo consommé, refried beans, avocado, and fresh tortillas. To complete the meal, the dessert Flan de Tejate will combine white cacao with mezcal caramel, providing a sweet and satisfying finish.
Enhancing the dining experience, guests were able to enjoy a selection of expertly crafted cocktails by Bar Manager, Marc Perez, including The Cenote which blends tequila, sherry wine, shiso, yuzu, citric solution, agave honey, and worm salt for a refreshing twist. The Guero cocktail features mezcal espadin, chilli syrup, basil, lime, and a Quesillo (Oaxaca cheese style) foam. For those who enjoy a rich flavour, the Mexpressor includes tequila, Oloroso fortified wine, cocoa coffee pot Azteca style, agave honey, and Thai orange liqueur air. The Cantarito de Don Alonso offers a unique mix of tequila, epazote, peppermint, grapefruit, lime soda, Himalayan pink salt, and Nestea powder. The event promises a night of dynamic and immersive gastronomic delight, with guests enjoying the best of both worlds amidst stunning city views.
