Enjoy exclusive menus from our seven chef. Started with Lemongrass chicken lollypop, mince prawn on toast, betel leaf with condiments by Chef Bang-Orn Narkrung. Following by Beef Carpaccio, blueberry rosemary honey dressing crispy artichoke chips, radicchio from Executive Sous Chef Francesco Bettoli and Baked Boston Lobster, Sichuan spicy sauce, wild mushroom in tomato cup prawn in yellow mustard sauce and steamed sea scallop dumpling from Chef Wai Ming Lo and Chef Kin Fai Mak. Next is Duck breast tajin, pumpkin, date, cinnamon, serve with couscous by Chef Nidal Kiwan. Tuck into a main course, Slow cooked dry aged Australian Wagyu sirloin, Celery and apple gratin, Melba toast of marrow bone,Bordelaise sauce, by Executive Chef Philippe Guadal. End up the special dinner with Pink biscuit from Reims, raspberry mousse, mandarine Champagne sherbet, Berries compote Mignardise by Executive Pastry Chef Jean-Marc Breney.
