Bangkok – October 2011 – Madison proudly presents a wide selection of seasonal forest mushrooms which are well known for being one of the most appreciated delicacies in any cuisine around the globe, with its Mushroom Promotion.
Chef Anchalee and her team are featuring dishes using mushrooms such as the trumpet-shaped king oyster, the plump porcini mushroom, and the ‘lord of the forest’, morel mushroom. Other seasonal mushrooms on the menu include the Portobello, chanterelle, the flat mushroom, the button mushroom and the chestnut mushroom. On the menu too is the rare autumn-winter season black truffle, infusing its dark, earthy flavor into a variety of dishes.
Delicious a-la-carte mushroom dishes awaiting for you to savour include Grilled King Oyster Mushroom with Shaved Parmesan Cheese and Herb Oil, Black Truffles Mushroom stuffed with Scallops with Herb Salad, Balsamic Oil, Flat Mushroom and Pork Burger with Beetroot Crisp and many more. Bangkok – October 2011 – Biscotti, the fun and contemporary Italian restaurant at Four Seasons Hotel Bangkok, is thrilled to present to you the last wine dinner event of the year at the restaurant, Truffles and Vignamaggio Wine Dinner, to celebrate the beginning of the Truffle season.
A carefully thought of Truffle menu prepared by Chef Daniele and his team will have flavorful and aromatic dishes each containing this delightful luxurious ingredient paired wines from the Super Tuscan wine producer "Vignamaggio". The estate is nestled in a beautiful corner of the Chianti countryside with a history of wine making dating back to 14th century. In fact, Mona Lisa, model in the famous portrait by Leonardo da Vinci was born there in 1479. It was also the location for the movie 'Much Ado About Nothing'.
Amongst the achievements from both Robert Parker and Wine Spectator for the featured Vignamaggio wines are 90 and 91 points respectively for the Cabernet Franc and the Obsession.
Highlights from the five course menu include Hokkaido Scallop with Black Truffle, Pan Seared Foie Gras with White Truffle Foam, Champagne Risotto with White Truffle, Morel Mushroom and Black Angus Tenderloin with Black Truffle, and Cremonini Sorbet with White Truffle Dust for dessert.
