As editor of At-Bangkok.com and Hi-Class Magazine, I always get the question of "Where should we go for nice romantic dinner?" To choose a fine dining venue is always a challenge because there are so many in the city of angle. There will always be new venues and older ones you never knew about. You will only know a couple of places from your experience or from a friend that has been there recommending it. Once again yesterday a friend asked me to suggest a venue to celebrate his wife's birthday. I suggested Cy'an, one of the recent restaurants I visited. He had no idea where it was and I'm sure many of you wouldn't. When I told him it's at the Met? Still no clue. At the end he went there and discovered a gem.
Cy'an is located at The Metropolitan, a 5 stars hotel in Bangkok's busy Satorn Road. It is the flagship restaurant. It is shaded in white and earth tone color and minimalist design concept. The minimal design is very sensitive to natural lighting, making the atmosphere vary depending the time of day. Once the sun goes down, the lighting makes the space comfortable and relaxing. The pool side outdoor terrace is where you'd want to be.
For dinner the tasting menu is a good choice to try most of signature dishes and enjoy different experiences from chef Daniel Moran. It's an 8 course set from starters to mains and to deserts with or without wine. With wine, 5 different wines are carefully selected to match the dishes (wines are served in half portion).
Champaign was a good step to a nice meal "Mo?t Chandon Brut Imp?rial", a decent bubbly with citrus flavors a perfect match with "Raw flavors of the sea". Its raw black kingfish, avocado, citrus caviar and peppery herbs, the citrus caviar was a nice touch to make the dish stand out.

Followed by "Oysters & pearls", a Barron Point Oyster in vodka tempura and vegetable broth. The thick soup with intense flavor reminds me of Chinese shark's fin soup. It is served with Terrazas Varietal, Mendoza, Chardonnay, Argentina 2005.
"From the garden", this is a rare and interesting salad if you may call it that, a vegetarian dish with good combination of meaty nutty cooked and crispy fresh raw vegetable with creamy nutty flavors. It is served with Lincoln, Gisborne Muscat, Ice Wine, New Zealand 2004.

This is a dish you should have, guilt free every once in awhile but not too often. "Fat of the Land" is duck foie gras with roast figs, mulberries and hazelnuts. It is perfectly cooked, caramelized glazing and melt in your mouth finish. Thanks to Wyndham Estate Bin 222, Chardonnay, Australia 2003, the sweetness of it went along very well with the foie gras.

We were almost full but we haven't got to the main, the tasting menu includes 2 main courses. The first is "Salty seas". It is the hapuka fish cooked in spiced yogurt, mixed with braised eggplant salad and chermoula. The habuka was nicely prepared giving it a lobster like texture. The next main course is "A life of grains". It is a blackened wagyu beef sirloin spiced with piquillo peppers and garlic pur?e with an interesting grilled tomato sauce. The matched wine is Terrazas Varietal, Mendoza, Cabernet Sauvignon, Argentina 2005.

There is a pre-dessert so you actually get 3 desserts, from cotton candy to ice cream to custard.
Overall the sample menu at Cyan is very well rounded; you get as many tastes you can imagine from raw fish to vegetarian dish to nicely prepared fish to top quality beef with matching wines, with good service and a nice poolside ambiance.
