Cooking Class @ The Conrad

Dessert is what makes a meal complete. Learning how to creat that authentic sweet taste is something you could do by yourself.
The atmosphere of the class

To convey the right cooking method, the chefs at The Conrad Bangkok launched the project "Let's Cook It Right" which offers many cooking courses. We had the opportunity to experience the dessert course which was a demonstration course only, you don't actually do the cooking.
The ingredients

Chef Golaszewski started the class greeting us and introducing all three desserts. The first dessert was Caramel Panna Cotta with Fresh Berries. It is an Italian version of Kanom Mo Kaeng and looks like custard but its texture is softer and smoother. The secret is caramel sauce which should be cooked just before the time of serving; otherwise, there won't be the contrast of the warm sauce against the cold panna cotta. Also, you could put some berrys to break its sweetness.

The second menu is White Wine Jelly with Exotic Fruits. It is the jelly made of white wine with exotic fruits inside. You could use other liqueurs but white wine is preferable because you could see the colorful fruits inside. Also avoid using fruits with a lot of acids which would make gelatine not to be formed.
Chocolate Mousse with Cherry

The last menu is my favourite dessert. It is Chocolate Mousse with Cherry, a simple dish that has many layers. Each layer was filled with chocolate mouse, crushing oreo cookies and cherry jam. It is decorated with shaving white choclate, chocolate cigar and fresh cherry.
After class, all participants received a certificate, took photos with Chef Golaszewski and had lunch together.

What we have learned from the chef was very useful and if you have many questions you can gain alot. The dish mentioned can also be found at the Conrad.
