If you're looking for the venue where it offers a cooking methods from appetizer to dessert, JW Marriott's cooking class at Tsu and Nami Japanese restaurant can certainly be on top of your list.

Tsu and Nami are the venue for July's class located at the base floor of JW Marriott on Sukumvit 2. The two restaurants are separated into two zones providing spacious space for sushi or Japanese cuisine dining at Tsu and teppanyaki dining from Nami. The class is arranged for a maximum of 12 interested guests held every first Saturday of each month, or it can be opened any days in case there is a group of at least ten guests.
Sushi practical session

After a warm welcome from the staffs and the head chef Akihiro Izumi, we started the cooking session with sushi making at the sushi bar area. The demonstration was conducted by chef Aki. He is an experienced chef who has spent almost a decade working in the U.S. Japanese restaurants. He showed the step by step stages and techniques in making California roll, Norimaki or seaweed rolled sushi with the bamboo rolling mat, sushi and Temaki a cone-shaped like sushi. After the demonstration and question part, we got a chance to make our own sushi according to all the steps mentioned but found out it was not easy to make the beautiful ones as the chef does. So more practice is what you need when cooking. Cutting the nice rolls is also difficult. The technique is wet the tip part of the knife a little and quickly cut the rolls with this part of the knife.

After the sushi, we were also introduced to the sour Sunomono salad with ingredients and easy way of cooking. Then we observed the steps in making chicken curry udon, a type of Japanese noodles with thick, soft and sticky texture. At this part, the participants got to see the close-up demonstration and take note in dish making inside Nami restaurants' kitchen. The secret of the soups is the proportion of the water, Dashi stock and the seasonings.

Followed by the pastry making by JW Marriott's British pastry chef John Evans, this session we got a chance to learn how to make Om Ali, a very easy dessert of puff pastry soaked in milk with many kinds of nuts and topped with whipped cream. The technique in making this dessert is that you pour the hot sweetened milk on the pastry a little at a time. This is to avoid the soggy pastry but at the same time, it should not be too dry as well. To flatten the dessert's sweet and rich creamy taste, we should add on the dessert with a few drops of rose water which is usually used with creamy desserts. After mixing all the ingredients together in a bowl, put the whipped cream on the top, bake it in the oven or burn the whipped cream with the fire gun.
Next, we learned how to make the cocktail called "Aki." This drink is a combination of orange and lime juice with honey, Gin and Japanese traditional alcohol sake decorated with orange slice and cherry. The juice should be added in the shaker first and followed by the alcohols, ice and honey at the top, so the sweetness of honey can split easily this way. This cocktail will be perfect with the balance in its mixtures.

We ended this enjoyable class with teppanyaki lunch at Nami restaurants. We observed and took notes from the teppanyaki chef. The teppanyaki dishes are usually the fried seafood or beef, fried vegetables, garlic fried rice with dipping sauces. At Nami, there are ginger, hot chili and mayonnaise sauce. Ingredients in teppanyaki cooking are minimal: oil, salt, pepper, butter (or garlic butter for the fried rice) and shoyu.

The venue offers you quite an enjoyable Saturday morning learning about cuisine, dessert and drink with a chance to practice your cookery skills. The program is priced reasonably while you will learn a lot about cuisine with lots of ideas for a party. The staffs are friendly and the service is very nice. After the class, we have no doubt why we feel like setting a small party with friends!
