THE ESSENCE OF THE SUMMER THROUGH IGNIV BANGKOK NEW SUMMER MENU
IGNIV Bangkok (1 MICHELIN Star since 2022) welcomes the European summer with our brand-new 18 dishes in the Summer Menu, inspired by warm breezes, sunshine, outdoor activities, nature’s vibrant palette, and the freshness of seasonal produce. Sourced from Europe, Asia, and particularly Thailand, these ingredients come together in a refreshing, light, and visually inviting menu, available throughout the summer from June 2 until August 31, 2025.
Head Chef Arne Riehn drew inspiration from sunny European summers, when fruits and vegetables flourish, especially citrus fruits. Their bright flavors and fragrant aromas capture the essence of the season. He brings this sense of freshness and lightness to the forefront of IGNIV’s summer creations, artfully blending premium seasonal ingredients such as shiso leaf and grapefruit alongside Thailand’s finest local produce such as mangosteens from Chanthaburi, Namwa bananas from Nonthaburi, mountain kombu (tong hom in Thai, locally known as ko po la by the Karen tribe) from Tak, and germinated rice from Buriram. The menu features a variety of mangoes, from tangy green mangoes grown in Sisaket and Ubon Ratchathani to ripe Nam Dok Mai mangoes from Nakhon Nayok.

The Summer Menu begins with inventive snacks, such as Cornetto—Green Mango—Chili, a playful nod to Thailand’s iconic summer fruit, presenting a crispy cone crafted from Nam Dok Mai mango and filled with green mango salad and chili, and Fig Leaf—Rice—Citrus, featuring pickled fig leaves from Chonburi wrapped around germinated rice from Buriram, offering a delicately balanced sweet and sour flavor profile.
Appetizers continue to highlight fresh, vibrant flavors, such as Kampachi—Radish—Kaffir Lime showcases premium kampachi fish from Japan served with a zesty Thai herb sauce made from kaffir lime, lemongrass, galangal, and chili. Carabinero—Barley—Herbs features a seared Carabinero prawn, served with nage mousse made from langoustine stock, fire-roasted barley, and a refreshing pink grapefruit jelly.
Main courses include standout dishes such as Wagyu Short Rib—Salsa Verde, a grilled Wagyu short rib glazed with barbecue sauce, accompanied by a bright salsa verde made with fresh herbs. Black Cod—Mountain Kombu—Caviar features seared black cod paired with a mountain kombu beurre blanc, topped with caviar and enhanced by black garlic mayo.
The experience ends on a sweet note with highlights such as Passionfruit—Roasted Banana—Macallan, a dessert inspired by Thailand’s beloved grilled bananas. Chef Arne reimagines this classic as roasted Namwa banana wrapped in a delicate brick dough roll with a touch of bright passionfruit. The signature Soufflé features quark cheese and citrus zest, topped with lemon peel for an extra refreshing finish.
As part of the IGNIV by Andreas Caminada from Switzerland, IGNIV Bangkok stays true to its core philosophy of “sharing experience.” The thoughtful tasting menu is designed to invite guests to enjoy themselves together, discover and share memorable culinary moments with one another.

The Summer Menu is available daily for dinner from 6:00 PM to 11:00 PM at THB 5,500++ per person, or enjoy the Lunch Break Experience, which offers a glimpse of our Summer Menu, from 12:00 PM to 3:00 PM for THB 3,200++ available from June 2, 2025, to August 31, 2025. A vegan, vegetarian, a la carte, or kids’ menu is also available to cater to guests’ requirements.
