Crustacean cappelleti pasta served with leek fondue, emulsified coral butter and lime

- Lobster and chestnut bisque with sweet garlic emulsion and savory

- Lobster and heart of palm salad served with sweet potato rouille and pomelo

- Lobster aspic dressed on a thin gelée of gazpacho, warm lobster claw and parsley and spinach sauce

- Quail egg and lobster salpicon in a puff pastry shell

- Burgundy-style lobster served with red wine-braised beef cheek, glazed carrots and spring onions


Moroccan-style roasted Maine lobster with quinoa and spicy vegetables

- Marinated pineapple carpaccio scented with Selim pepper, Marc de Bourgogne granite

and coconut espuma
