Rosewood Bangkok presents a gastronomic collaboration between Nan Bei’s Chef Matthew Geng and guest Chef Dan Bark from 1-Michelin-starred Cadence with “East—West Harmony” from 11 – 12 March 2023 at Nan Bei.

The 7-course collaboration highlights Chef Matthew’s authentic regional Chinese dishes, presented alongside Chef Dan’s signature Progressive American creations showing the country’s melting pot of culinary influences.

Canape bites welcome guests to the 19th floor of Rosewood Bangkok, setting the tone for the contrasting yet complementary flavor profiles of East and West, including: Jamón Ibérico with Fig on Sourdough; Truffle & Parmesan on Brioche; Peking Duck & Caviar; and Black Truffle Shrimp Wonton.

The pairing of culinary inspirations continues for the first course, with fresh seafood beautifully prepared in Crab Tartlet; Oysters with Yuzu Beurre Blanc; Boiled Conch with Soy Sauce Cucumber; as well as a Red Wine Foie Gras prepared by Chef Matthew.

The following two courses come courtesy of Chef Dan who explores the complexities of the ingredients and combines them with artfully crafted dishes, starting with a Spanish Mackerel Mosaic served with caviar, followed by a Roots with Truffles dish served with taro custard, pickled Shimeji mushrooms, raw shavings of mixed root vegetables and truffle slices.

The classic Chinese delicacy of Fish Maw and Matsutake Soup is then promptly prepared following Chef Matthew’s traditional recipe, believed to be nourish “yin” to promote kidney and digestive health.

For the next course, Chef Matthew embodies his philosophy of staying true to authentic Chinese flavors as they have been prepared for thousands of years, but adapting them with local ingredients and the chef’s evolving techniques. A choice of three main courses is offered, including: Steamed Egg with Grouper Fillet, Eggplant Rolls with Boston Lobster, or Pan-Fried Australian Scallops with Char Siew Rice.

For the main course, Chef Dan draws on his heritage for Korean BBQ Wagyu Ribeye, grilled to tender perfection and served with homemade ssamjang, braised and pickled radish, soy preserved cherries, and micro shiso leaves for a perfect bite-sized indulgence.

The dessert is also given a Chinese flair by Chef Matthew, giving diners a sweet note to end on with Coconut Strawberry Jelly with Bird’s Nest Egg Tart.

Located on the 19th floor of Rosewood Bangkok, Nan Bei is a Michelin Plate-awarded restaurant serving an authentic Chinese dining experience amidst an art deco interior inspired by a traditional Chinese folklore of two star-crossed lovers.
