Sra Bua by Kiin Kiin Reveals a New Fascinating ‘Summer Journey’ from 1 April until 30 September 2023

| April 10, 2023

The renowned one-Michelin-star restaurant for six consecutive years, Sra Bua by Kiin Kiin at Siam Kempinski Hotel Bangkok celebrates the warm and pleasant season with the new ‘Summer Journey’ from 1 April until 30 September 2023. Continuing its legendary modern-Thai gastronomy, Sra Bua by Kiin Kiin remains consistent in composing unique and innovative modern Thai dishes created by award-
winning Michelin-star chef Henrik Yde-Andersen and senior head chef Berm Chayawee Suthcharitchan.

The ‘Summer Journey’ is designed to reflect Chef Henrik’s gastronomic travels as he reminisces on his ventures throughout the regions of Thailand and life in Europe, where he has a vineyard and farm in Spain. Inspired by the multifaceted ‘summer’, Chef Henrik
and Chef Chayawee join forces to develop menus to suit the season using the finest summertime ingredients in all inspired dishes.

The ‘Summer Journey’ menu embraces 16 invigorating courses, beginning with Sra Bua by Kiin Kiin’s famous eight ‘street food’ canapés to delight guests upon arrival at the lounge, and was inspired by Chef Henrik’s food travels. It includes the all-time favourite soy meringue with wasabi yoghurt; moon food edible bag with puffed rice-flavoured ‘tom yum’, crispy chicken skin with ice-cream satay; chicken green curry ice-cream cornetto; and more, which have been incorporated into his street-food bites.

The journey continues with the ninth course at the dining table with a refreshing ‘red raw prawn carpaccio, lemongrass gel, crispy lime leaf tapioca’ with bursting flavours. The tenth course presents the signature ‘five-spice duck consommé’ served with two homemade duck condiments, including duck sausages and laab duck.

This leads into the 11th course, which features the grilled and tender Hokkaido scallop served with Thai seafood sauce and smooth-textured corns and celery spinach purée. The 12th course portrays an Alaskan king crab served with cold ‘tom kha’ semi-frozen and white asparagus ice cream, which completes this dish.

The 13th course is fried lobster with red curry flan and lobster bisque with a creamy-and- savoury taste that cannot be missed. The 14th course is the highlight main-course dish, with ibérico pork slow-cooked for 12 hours served with soy butter sauce with ginger, onion and pickled pineapple on the side. This dish is also served with aromatic jasmine rice from Yasothon province baked with pork.

The excitement is not yet over as this 16-course journey concludes with classic European desserts and a touch of Thai to celebrate the meal. The 15th course begins with the ‘fruit of the month, rose gel and lemon mousse’, which is a perfect dessert to relieve the summer heat. This surprise dessert will require a spoon to break open an ice dome before enjoying what is waiting beneath. Last, but definitely not least, the meal finishes with the 16th course, ‘rhubarb soup with pandan ice cream and financier’, from Chef Henrik’s grandmother’s recipe, presented as a beautiful white iceberg, before concluding in style with the imaginative and very creative petit fours.
