The Flavour of Irresistible White Alba Truffles at La Scala

The open kitchen at La Scala will come alive with the magnificent aroma of White Truffles from the Alba region of northern Italy, providing guests with a rare opportunity to indulge in the ultimate truffle experience for both lunch and dinner from 1-23 December 2015.

Truffles, or “tartufi” as they are known, are richly flavoured mushrooms that first appear in early autumn, from October to December. They are rounded and irregularly shaped, white truffles usually being twice the size of black truffles, with a smooth exterior and a pungent fragrance best described as a blend of garlic, mushrooms and matured parmesan cheese.

Our Italian Master Chef Michele Totaro has exquisitely prepared an à la carte menu that emphasizes the distinct flavours of white Alba truffles, for which menu highlights include:–

MANZO PIEMONTESE – Beef Tartar Mayo, White Alba Truffles

RISOTTO – Aquerello Rice, Goose Liver, White Alba Truffles

VEAL – Slow Cooked Veal Loin, Caprino Cheese, Porcini Mushroom, White Alba Truffles

La Scala opens daily: Lunch from 12:00 to 15:00 hrs and Dinner from 18:30 to 23:00 hrs.
