WEERAKET (JOE) NILAYON EXECUTIVE CHEF, THE HOUSE ON SATHORN

Weeraket Nilayon or Chef Joe was first graduated from Bachelor’s Degree in Marketing from Dhurakij Pundit University. After his graduation, he worked in marketing field for quite a while, then he decided to leave to Gold Coast, Australia where his culinary dream began. In 2004, he attended school of Culinary Arts at TAFE Queensland whilst working 6 evenings a week after school as a kitchen hand and a waiter at one of the Thai restaurants. As he was very enthusiastic about culinary with the talented and proven skills, he later became a head chef of the restaurant. After 4 years of working and studying in Gold Coast, Chef Joe decided to come home and joined Sheraton Grande Sukhumvit as Commis II at BarSu and later at the hotel’s Italian restaurant, Rossini’s.

In 2009, Chef Joe moved to Krabi to join an opening team of Phulay Bay, a Ritz Carlton Reserve as Commis I where after only 2 months he got promoted to be Demi Chef. After spending some times in Krabi, Chef Joe came back to Bangkok to serve as Demi Chef and a year afterwards Chef de Partie at Brasserie Europa, Siam Kempinski Hotel Bangkok. With his shining performance, he was assigned to be Junior Sous Chef in an opening team for a new restaurant called “Niche” for another 3 years prior to joining The House on Sathorn.

Bringing a bag full of experiences and passion, Chef Joe started his journey with The House on Sathorn as Sous Chef at The Dining Room in February 2018. Chef Joe’s culinary path first began with the joy of cooking at home for his family and loved ones. His love and passion for cooking had developed from just home cooking within family to become professional career and brought him to where he is today. Chef Joe is currently Executive Chef and has been a great contributor for the new dining concept Modern Thai Seafood at Paii at The House on Sathorn.
